The Natcha Coffee Difference: Highest Brix, Handpicked Perfection


Our journey begins with the red coffee cherries, but not just any cherries. We meticulously handpick only those with the highest Brix levels, a measure of sugar content that indicates peak ripeness. This ensures that every bean is packed with the natural sugars and nutrients needed to create complex, sweet, and vibrant flavors.


Our farmers carefully inspect and select each cherry by hand, ensuring only the ripest and highest-quality cherries proceed. This commitment to quality is the foundation of everything we do.


From Farm to Cup: A Step-by-Step Guide


Once the highest Brix cherries are selected, they undergo our meticulous crafting process:


1. Sortation Pool:

Cherries are sorted in a pool to remove floaters, ensuring only the densest, highest-quality cherries move forward.


2. Thermal Shock:

The cherries then undergo thermal shock, spending 6 hours in a drying dome at 65°C. This locks in natural sugars and prepares them for fermentation.


3. Rehydration & Yeast Infusion:

After thermal shock, the cherries are rehydrated and infused with carefully selected yeast, enhancing their natural origin notes.


4. Carbonic Maceration:

Pulped cherries, along with their parchment and cascara, enter carbonic maceration tanks. Here, we introduce red wine yeast and inject CO₂ every 3 hours for 36 hours, creating a unique environment that develops the coffee’s signature vibrant and fruity notes.


5. Wet Hulling and Drying:

Once fermentation is complete, the beans are wet-hulled to remove their parchment and dried in our dome at 45°C until they reach 13% moisture content.


6. Precision Sorting:

Beans pass through a **gravity sorter** to eliminate low-density beans, followed by a color sorted to remove any black or defective beans. Finally, each bean is hand-picked for perfection.

By carefully controlling temperature, time, and CO₂ levels, and introducing red wine yeast, we unlock new dimensions of flavor. This scientific approach preserves the bean’s natural sugars and enhances fruity, wine-like notes, creating a truly memorable coffee experience.
